布基納法索的慈幼會屬於新成立的會省(AON,2021),有兩個團體:位於該國中部的首都瓦加杜古和西南部的博博迪烏拉索。

加羅夫飯是一鍋由米、番茄醬和蔬菜(茄子、胡蘿蔔、洋蔥、紅辣椒、大蒜)一起煮成的燉飯,配上幾根生洋蔥。可配烤雞腿享用。

材料(4人份)

雞:

  • 60 毫升植物油
  • 500 克雞腿
  • 鹽和胡椒粉調味

飯:

  • 120 毫升植物油
  • 2 個黃洋蔥,切碎
  • 5 瓣蒜頭,切碎
  • 2 個哈瓦那辣椒,切碎
  • 3 個蕃茄,去籽切碎
  • 180 毫升番茄醬
  • 500 克米
  • 1.2 升雞湯
  • 肉桂條
  • 鹽和胡椒粉調味

作法:

  1. 在大鍋中加入油,用中火加熱。 加入雞肉,用鹽和胡椒調味。
  2. 雞肉煮至完全煮熟,約 10 分鐘,中間翻動一次。
  3. 將雞肉移到舖有紙巾的盤子上備用。
  4. 將植物油加入同一個鍋中,用中火加熱。 加入洋蔥,煮至半透明,約 5 分鐘。
  5. 加入蒜頭、哈瓦那辣椒和蕃茄。 再煮 3 分鐘,偶爾攪拌。 加入番茄醬並攪拌混合。
  6. 加入米並攪拌混合。 加入雞湯、肉桂條、鹽和胡椒粉(按口味)。 攪拌均勻,用大火煮沸。
  7. 煮沸後,蓋上鍋蓋,用慢火煮飯並偶爾攪拌,直到米飯煮熟並且液體被吸收。

Riz gras is one-pot dish consisting of white rice, tomato paste, and vegetables (eggplants, carrots, onions, chili peppers, garlic) boiled together in a thick rice stew served with a few strands of raw onions. It is usually served with a roasted chicken thigh.

INGREDIENTI | 4 servings

For the Chicken

  • 60 ml vegetable oil
  • 500 g chicken thighs
  • salt and pepper, to taste

For the Rice

  • 120 ml vegetable oil
  • 2 yellow onions, chopped
  • 5 cloves garlic, minced
  • 2 habanero peppers finely chopped
  • 3 tomatoes seeded and chopped
  • 180 ml tomato paste
  • 500 g long-grain white rice
  • 1.2 litre chicken stock
  • cinnamon stick
  • salt and pepper, to taste

PREPARATION

1. Add oil to a large pot and heat over medium. Add the chicken and season with salt and pepper.

2. Cook, until the chicken is cooked all the way through, about 10 minutes, flipping once in between.

3. Remove the chicken onto a paper towel-covered plate. Set aside.

4. Add the vegetable oil to the same pot and heat over medium. Add the onions and cook until translucent, about 5 minutes.

5. Add the garlic, habanero peppers and tomatoes. Cook another 3 minutes, stirring occasionally. Add the tomato paste and stir the mixture to combine.

6. Add the rice and stir the mixture to combine. Add the chicken stock, cinnamon stick and salt and pepper (to taste). Stir well and bring to a boil on high heat.

7. Once boiling, cover the pot and decrease the heat to “low.” Cook, stirring occasionally, until the rice is cooked and liquids absorbed (12 minutes).
